Bbq Meatloaf with Cheddar Potatoes




















In a bowl, combine ½ kilo ground beef, 1 egg, ¼ cup breadcrumbs, ¼ teaspoon salt, and ¼ cup bottled barbecue sauce. Mix well then form into 4 small loaves. Place on a baking pan and broil for 12 minutes. Turn the loaves. Top with more barbecue sauce. Continue cooking until done. In another bowl, mash 4 large boiled and peeled potatoes with ¼ cup milk and ½ cup shredded Cheddar cheese. Serve with meatloaf.


TIP: If you don’t have a broiler, use a saucepan. Heat some oil and brown the meatloaves. Pour in more barbecue sauce, cover the pan and let cook until done.
