In a saucepan, bring to a boil 1 ½ kilos pork baby back ribs, 1 quartered
onion, 1 tablespoon whole peppercorns, 1 tablespoon coriander seeds, and
enough water. Simmer for an hour or
until the ribs are very tender. Drain. In another pan, heat 3 tablespoons butter. Sauté 1 chopped onion and 4 cloves crushed garlic. Add 2 cups tomato sauce, ¼ cup vinegar, ¼ cup
brown sugar, 1 teaspoon salt, and ¼
teaspoon pepper. Simmer for 20 to 30 minutes. Brush this sauce over the
ribs then grill until browned. Baste with the sauce, once in a while.
TIP: The secret to super tender ribs? Cook the meat until tender
then grill just until browned and well seasoned.
